Herbed Soda Bread + Fig Chutney

Herbed Soda Bread
This bread is soft, flaky and has an irresistible smell!  


Herbed Soda Bread
Ingredients:
250 g whole meal flour
250 g white flour
2 tsp salt
2 tsp white sugar
1 tsp baking soda
1 tsp baking powder
90 g butter
3 tbsp parsley, chopped
1 tbsp chives, chopped
1 tbsp rosemary, chopped 
(all herbs fresh, not dried!)
500 ml milk

Put flours, salt, sugar, baking soda and powder in a big bowl, add butter and mix until it is flaky. Add herbs, then the milk and stir until you have a soft dough. 
Put the dough in a round, greased tin (diameter 20 cm). Cook in the preheated oven at 190 degrees C for 40 - 45 min.

Fig chutney

Ingredients:
250 g dried figs, chopped
2 red onions, chopped
2 tbsp oil 
2 tbsp red currant jam
150 ml water
2 tbsp balsamic vinegar

Heat oil in a small pot, add onions and let cook for 2 mins. Add figs, jam and water. Let boil for ca. 10 mins until the figs are soft and the chutney is creamy. Stir in balsamic vinegar and let cool. Enjoy on bread or with meat!
